At the heart of a classic beef lasagne is a great ragu, and that starts with butcher-quality Extra Lean Beef Mince (5% Fat*). Ours is only 5% fat, full of flavour, and perfect for slow-cooking into a rich, tomatoey meat sauce. Add a simple white sauce and a generous handful of cheese, and you’ve got something that’s guaranteed to disappear fast (with requests for seconds).

Make the ragu – Heat a splash of olive oil in a large pan over medium heat. Add the onion, garlic, carrot, and celery. Cook gently for 10 minutes until soft. Add the beef mince and brown well all over.
Add depth – Stir in tomato purée, oregano, and basil. Pour in the tinned tomatoes and red wine (if using). Season with salt and pepper. Simmer uncovered for 30–40 minutes until thickened and rich.
Make the béchamel – In a separate pan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk, stirring constantly until smooth and thick. Season with salt, pepper, and a pinch of nutmeg if using.
Layer it up – In a large ovenproof dish, spread a spoonful of ragu on the base. Top with lasagne sheets, then more ragu, then béchamel. Repeat the layers, finishing with béchamel on top.
Add cheese – Sprinkle over the mozzarella and parmesan. Bake at 180°C (fan 160°C) for 35–40 minutes until golden, bubbling, and crisp on top.
Let it rest – Leave the lasagne to sit for 10–15 minutes before serving. It’ll hold together better and taste even richer.
